Peanut Butter Banana Muffins

The traditional peanut butter and banana pairing are ideal for a nutritious breakfast or snack. These muffins are a fantastic choice for diabetics because they are low in sugar and protein.

Ingredients:

  • 1 cup of flour
  • 1/2 cup of PBfit
  • 2 ripe bananas, mashed
  • 1/4 cup of almond milk
  • 2 eggs
  • 1 tsp of baking powder
  • 1/4 tsp of baking soda
  • 1/4 tsp of salt

Instructions:

  1. Preheat the oven to 350°F.
  2. Mix the flour, PBfit, baking powder, soda, and salt in a large bowl.
  3. Whisk together the eggs, mashed bananas, and almond milk separately.
  4. Mix the dry ingredients just until mixed after adding the wet ingredients.
  5. Fill muffin cups in a muffin tray with the batter.
  6. A toothpick put into the center of a muffin should come out clean after 20 to 25 minutes of baking.
  7. Before removing the muffins from the tin, allow them to cool for a few minutes.
